Baked Coconut French Toast! Toasted Coconut and Creamy Vanilla---- All Clean!

There are few things in life that can't be made better with coconut... cookies, cake, pies, candy--- but what if you're looking for a clean way to enjoy coconut in your dishes? Then try this recipe out: baked coconut French toast. Toasted coconut, creamy coconut milk, and a mix of sweet vanilla cinnamon all to ensare your tastebuds... Intrigued yet? I know my mouth is watering already!


Recipe:
Baked Coconut French Toast (Serves 2)

4 Slices whole grain bread (I used Ezekiel bread)
4 egg whites
1/2 cup light coconut milk
1 Teaspoon vanilla extract
1/2 Teaspoon cinnamon
1/4 Cup shredded unsweetened coconut
4 Stevia Packets
2 Tablespoons additional shredded unsweetened coconut as garnish

Preheat the oven to 400. Cube the whole grain bread into bite-size pieces. Divide the bread cubes equally into two separate oven-safe ramekins or bowls. Whisk together the remaining ingredients (except for the coconut to garnish with) in a bowl . Pour the mixture evenly over the bread cubes. Garnish each bowl/ramekin with an additional tablespoon each of the shredded coconut. Bake for 20-25 minutes, or until the coconut on top becomes slightly browned. Serve with agave, honey, maple syrup, or Greek yogurt on top. Enjoy!

This recipe is one of my favorite versions of baked French toast, because, really, who can resist the allure of some coconutty goodness early in the morning? Not this clean eatin' queen! This recipe can be altered to incorporate vanilla whey protein powder, as well, by adding a scoop of protein powder (1 scoop per 2 servings--- don't forget that the recipe already has protein from the egg whites!) and about an additional 1/4 cup of light coconut milk (to ensure moistness). But this is definitely a downright delicious way to start your day off--- with clean eats and clean plates!
