Looking for an On-the-Go Lunch? Try Shrimp-Stuffed Avocado Halves!

Time and time again, I hear how people fall victim to the allure of a convenient, yet terribly unhealthy, fast food lunch. Well, for those of you out there who are health-conscious enough to pack your own lunch to take to work, school, or wherever--- then I have a great meal for you: shrimp-stuffed avocado halves. These little babies are a great lunch option, and the combination of the creamy avocado with the tangy shrimp salad is a perfect duo. Try this out for your next lunchbox meal!

Recipe:

Shrimp-Stuffed Avocado Halves (Serves 1)

1 Avocado, halved and pitted

4 Ounces shrimp, pre-cooked and de-tailed
2 Tablespoons plain nonfat Greek yogurt
1 Tablespoon red pepper, finely chopped
1 Tablespoon red onion, finely chopped
1 Teaspoon dijon mustard
1/2 Teaspoon lemon juice
1 Teaspoon parsley
1/4 Teaspoon pepper

Set aside avocado halves. In a bowl, combine all other ingredients except for the shrimp, mixing thoroughly. Toss the shrimp in the mixture, until evenly coated. Then, stuff each avocado half with the shrimp stuffing. Serve with a light spinach and tomato salad as a side if desired. Enjoy!
