Who Needs Chinese Takeout?! Clean Sweet & Sour Shrimp!

Chinese takeout can be so alluring... delicious and convenient--- but definitely not clean! Try this cleaned-up version of sweet and sour shrimp instead when you're craving some Chinese food! With just the right balance of sweet and tangy, this recipe is one that's sure to please even the most discerning of tastebuds!



Recipe:
Sweet and Sour Shrimp (Serves 2; Crockpot Recipe!)

8 Ounces shrimp
1/2 Cup rice
1 Cup water
1 Cup pineapple
1/2 Cup pineapple juice
2 Packets Truvia/Stevia
2 Tablespoons rice wine vinegar
2 Teaspoons soy sauce
1/2 Teaspoon ginger
Optional: chopped bell pepper, sliced carrots, chopped broccoli, or any other veggies you'd like

In a crockpot, combine all ingredients except for shrimp. Cook on low for 1-2 hours, or until most (but not all) of the liquid has been absorbed. Add in the shrimp, then continue to cook on low for another 30 minutes. Serve over brown rice or a bed of steamed veggies! Yum!

I couldn't get enough of this dish. It had the perfect amount of sweetness for me, and I just gobbled my bowlful up! Not to mention that it was a no-fuss dish to prep, since it was cooked in the crockpot quickly and easily! I hope you all enjoy this recipe as much as I did!
