Vanilla Protein Cake (Makes 1 8 inch round cake)
1 1/2 Cups whole wheat flour
2 Scoops vanilla whey protein powder (I used About Time/SDC Nutrition whey protein in, of course, Birthday Cake flavor!)
1 Tablespoon powdered milk
1 Tablespoon cornstarch
1/2 Teaspoon baking soda
1/4 Teaspoon salt
1/4 Cup Truvia/Stevia
3 Egg whites
1/2 Cup unsweetened applesauce
1/2 Cup unsweetened almond milk
1/4 Cup plain fat free Greek yogurt
1 Teaspoon vanilla extract (the imitation stuff is not clean!)
1/2 Cup seltzer water (AKA carbonated water) *** reserve for last!
Preheat the oven to 350 degrees. In a bowl, combine all of the dry ingredients. Once thoroughly combined, add in all of the wet ingredients, except for the seltzer water. Add in the seltzer water slowly, as you may need more or less depending on the thickening agents in the brand of whey protein powder you use. Add enough so that the cake batter is the consistency of traditional cake batter. Pour the batter into a greased 8 inch round cake pan, and bake for 20-30 minutes--- or until the top becomes golden brown. Remove from the oven to cool before serving

1/4 Cup plain fat free Greek yogurt
1 Teaspoon vanilla extract (the imitations stuff is not clean!)
1-2 Stevia/Truvia packets to taste
In a bowl, whisk together all ingredients. Serve with your vanilla protein cake! You can experiment by adding different flavor extracts, or even by adding fresh fruit to it! Yummy!
